My mom brought me some rhubarb from her garden. I love rhubarb cakes, but I have never made one before. So I looked through some recipes and chose my favorite one made with yogurt and spelt flour. 


  • 2 cups spelt flour (I used semi-rough whole-wheat spelt flour)
  • 1 cup brown sugar
  • 2 tsp baking soda
  • half tsp salt
  • half cup oil (or butter)
  • 2 eggs
  • 2 plain white yogurts (or sour cream)
  • chopped rhubarb

Mix oil and sugar well.

Add all the other ingredients (except rhubarb).

Pour the mix into a tray with baking paper and spread the chopped rhubarb on top.

Bake for 40 – 45 minutes at 175°C.

When finished baking, you can sprinkle the top of the cake with powder sugar if you like it sweeter 😉
